1 1/2 cups all-purpose flour
3 teaspoons baking powder
1/4 teaspoon salt
2 eggs
1 cup milk
2 tablespoons butter, melted
1/2 cup crumbled feta cheese
3 tablespoons snipped chives

3 tablespoons snipped chives
In a bowl, combine the flour, baking powder and salt.
In another bowl, whisk the eggs, milk, and butter; stir into dry ingredients just until moistened.
Fold in the feta cheese and chives.
Fill greased or paper-lined muffin cups 2/3 full.
Bake at 400 degrees for 18 to 22 minutes or until a toothpick comes out clean.
Cool for 5 minutes before removing from pan to a wire rack.
Serve warm.
Refrigerate leftovers.
Makes 1 dozen.
